Aloo Gobi recipe Restaurant Style – Dhaba Style Aloo Gobhi Recipe

Welcome to Nishamadhulika.com. Today we are going to make restaurant style cauliflower and potato dish.
This dish is very different in taste from the regular Gobi-aloo. The dish of cauliflower and potato can be made during any party or when
we have guests at home or when we feel like eating something different. Come, let’s start making cauliflower & potatoes. Cauliflower – 350 gram Potatoes – 350 Gram Tomato – 2 or 150 gram Ginger (Adrak) – 1 or 1.5 inch Green chilly – 2 Coriander leaves – 2 or 3 tbsp (Finely chopped) Oil – to fry the dish Cumin seeds (Jeera) – ½ tsp Asafetida (Hing) – 1 pinch Turmeric powder (Haldi Powder) – ¼ tsp Black Cardamom (Badi elaichi) – 2 Cinnamon (Dal chini) – ½ inch Clove (Laung) – 3 Black Pepper (Kali mirch) – 8 or 10 Coriander powder (Dhaniya powder) – 1.5 tsp Garam masala – ¼ tsp Red chilly powder (Lal mirch powder) – ½ tsp Fenugreek (Kasuri Methi) – 2 tsp Salt (Namak) – more than 1 tsp or as per taste To make the dish of cauliflower & potatoes or
Gobi-aloo, first we’ll wash and cut the vegetables. Cut and remove the stalks of the cauliflower. The soft part of the stalk can be used as it is delicious. Wash the cauliflower properly. Cauliflower is a vegetable of the winter season.
Good quality cauliflower is available in winters. If you make cauliflower during the rainy season, add salt to
hot water and wash properly. Soak it for about 10 minutes. Take out the cauliflower from the water. Now peel and cut the potatoes. Add oil to a pan and let it heat as we need to fry the potatoes. Cut each potato into 6 pieces. Make sure potato slices are of medium size.
They should neither be too small nor too big. If the potato pieces will be big in size then it will not fry properly. If the pieces will be too small then they will become too soft and will mix . Therefore make sure to cut them in medium size. Now grind tomato, ginger and green chilly. Keep a little ginger aside for later use. Grind the cardamom and garam masala. Once the oil is hot, add potatoes and fry them. Add as many potatoes as can come in the pan at one time. Make sure the oil is hot enough. If the oil is not
sufficiently hot, then the potatoes will absorb a lot of oil. Keep frying the potatoes till they become golden brown in colour.
Keep flipping them. Once the potatoes are golden brown, take them out in a plate. Fry the remaining potatoes in the same way. Once the aloos are fried take them out from the pan. Now fry the cauliflower the same way. Put as many cauliflower as can come at one time. Fry the cauliflower till they are golden brown. We had kept the cauliflower on a filter to
make sure that all the water seeps away. Fry the remaning cauliflower as well. Turn off the flame. Remove all the extra oil from the pan. Only 2 tbsp oil should be left in the pan. Now we will prepare the dish. The oil is hot, add Cumin seeds, ginger, turmeric powder,
dhaniya powder, grounded garam masala and Kasuri Methi. Mix everything well and roast. Now add the paste (that we had prepared
earlier by tomato, green chilly and ginger). Keep stirring it. Roast till the oil separates from the seasoning. Now add red chilly powder and mix. Keep stirring in between. The oil separates, this means that our masala is ready. Now add 1 cup of water to the masala. Add salt and garam masala. Once the masala is cooked, add cauliflower and potatoes to it. Add coriander leaves. Mix well. Keep stirring it till the vegetables are coated well with the spices. Cover the dish and let it cook for another 3-4 minutes on low flame. Our dish will be ready in 3-4 minutes. If you want the dish to have a lot
of gravy, then add some more water. You can cook the dish as per your choice. Take out the dish in a bowl. Garnish the dish using coriander leaves. Our restaurant style cauliflower and
potato dish is now ready to be served. This preparation is very delicious. This dish has a lot of oil and spices, which cannot be eaten daily. But we can enjoy it on special occasions.
